The best Mexican restaurant in northern Vermont, El Cortijo makes it's own tortillas and ingredients are locally sourced. If not entirely authentic (most places in the US aren't at all authentic anyway) the food is extremely good and fresh.

Open for lunch, dinner, and weekend brunch. tacos, burritos, bowls, and killer margaritas. Keeping it fresh and fun at the top of the roundabout in winooski.
