Nonantola (Campazzo) in The province of Modena,(Maranello FERRARI CAR -20 min) about half an hour in the Northwest of Bologna,(DUCATI MOTORBIKE,35 min, LAMBORGHINI CAR 10 min) is the only and exclusive area in the world where Aceto Balsamico Tradizionale di Modena (ABTM D.O.P.) is produced, a traditional Emilian cuisine made with Cooked grape must, naturally fermented and vinegarizated, nothing is added and then aged for at least twelve(12) years or Twenty five (25) and until fifty years or more. You will be immersed in a tasting experience (10 different kinds of aged vinegar) and understanding of the aging process of this Masterpiece of Italian culinary tradition. On Request IN ADVANCE (2 days at least) at the end of the visit you could taste the flavours of traditional balsamic vinegar of Modena in typical dishes (crescentine, prosciutto, salame, formaggio, Parmigiano Reggiano, vino, frittata, fragole, caffè, liquore) and you could buy a Giugiaro bottle of 100 ml of 12 or 25 years old vinegar, both at a special price
Other things to note
The aging process requires cold temperatures in winter and hot in summer so be prepared with the appropriate equipment. Don't forget the photo/video camera.

15 km from Modena/35km from Bologna; with Google maps it's easy to reach me.when You'll be at 150mt from my place you'l find 2 small roads. keep your right hand side, the small road with trees and after 150 mt you'll be in front of my gate. After parking the visitors can enjoy the visit the place where I keep my barrels for my aged Balsamic Vinegar(Acetaia), located 20mt from the main building.... and start to enjoy Balsamic Vinegar......

Guido's balsamic vinegar experience is fantastic! He is incredibly passionate and knowledgeable about vinegar production and you will learn and appreciate the stark differences between real, consortium balsamic vinegar versus the commercial types we buy in super markets. The best part of the tour is when he takes you to his vinegar making area and shows you the barrels that he has had since 1966! He lets you try various types and ages and it's so wonderful to see the process and taste the differences! He ends the tour by having you try his balsamic vinegar with parmesan cheese, strawberries, chocolate and ice cream - it was absolutely stunning. He is very generous with how much he gives, it's wonderful!

A fantastic experience if you want to learn about balsamico. Guide picked us up from the city centre, he made sure we feel comfortable and safe at all times. There‘s plenty to eat and drink and his house is just beautiful. He was very knowledgable and made our experience unique. Thank you so much for this unforgettable day!

Incredible experience! One of the highlights of our month-long trip to Italy. Guido went over and above our expectations. He put so much thought and care into the lesson, offered some creative and delicious ways to sample his family’s balsamic vinegar, and made us really appreciate the heritage and tradition that goes into this incredible food. Guido’s experience was amazing. His passion for traditional balsamic vinegar shows in his story telling and experience. We tried so many different balsamic vinegars, from the new mother barrel to a progression of a 30 yr old balsamic vinegar and finally his prized balsamic vinegar, a 53 yr old balsamic vinegar. È un'esperienza da fare! Mio marito, nostra figlia e io abbiamo apprezzato molto il tempo trascorso in compagnia di Guido nella sua acetaia e consigliamo davvero a tutti di viverlo. Conoscere una tradizione curiosa e particolare come quella della produzione dell'Aceto Balsamico Tradizionale di Modena D.O.P. e avere l'opportunità di degustarlo è affascinante e una festa per le papille gustative... inoltre la passione di Guido è contagiosa. A ciò si aggiungono la sua cortesia e la sua ospitalità, oltre la capacità d'interazione coi bambini. Un suggerimento, in più da parte nostra, è quello, se avete tempo di fare pranzo o cena, di chiedergli consiglio su dove mangiare, saprà darvi squisite indicazioni: fidatevi!
